My Current Go-To Vegan Lunch (Spicy Chickpea Cream Cheeze wrap)

I seem to have no issue finding breakfast and dinner ideas. But when it comes to lunches I end up drawing a blank. Its winter time here in Toronto, and its freezing. Eating a salad for lunch is just comforting at all, but eating left over pasta everyday will leave me extra fluffy in spring time lol. So I have found myself making this wrap pretty often. It has the veggies we need, but also some bulk and warmth that we crave when its cold out. Hope you enjoy 🙂

Ingredients

  • Can of chick peas 540mL
  • Tortillas ( I used 10 inch)
  • Lettuce, or spinach
  • 1 Red pepper
  • Smoked paprika
  • Franks Red Hot or, a vegan buffalo sauce.
  • Daiya cream cheese. Chive & onion.
  • 1 Sliced red onion

 

Step 1: Rise off a can of chickpeas.

Step 2: In a frying pan, add rinsed chick peas. Keep on low heat for a-few minutes to help evaporate some of the excess moisture. Add buffalo or hot sauce ( I use 2 tbsp, I would add 4-5 but my partner hates spicy foods) So load up on sauce if you like bold flavour, or take it easy if you want a mild warmth. Add 1/2 tsp smoked paprika + salt and pepper to taste.  Leave for 10 min, stirring occasionally.

Step 3: Take your tortilla and begin to apply cream cheese. If you are really watching your weight, do a thin coat, if you just want yummy cozy goodness, cake it on. I think I used able 4 tbsp.

Step 4: Slice up your veggies long ways

Step 5: Place all ingredients on the tortilla, try to keep them all to one side, and 1 inch from the edges. Fold in the corners, then begin to tightly roll the wrap.

Step 6:Slice in half and enjoy.

Tips/ Time savers : I do prep at the beginning of the week, this recipe will make about 4-5 wraps. Once I cut up the veggies I place them into individual tupperwares or ziplock bags, I do this with the chick peas as well. When I am ready to eat, I heat up the chickpeas in the microwave and take out a veggie tupperware, while the chick peas warm up I dump the veggies and cream cheese on the tortilla. If I need to take this wrap on the go or will be eating it later in the day, I will take the chick peas and mash them, then make the wrap as usual. The mashing makes the wrap a little less messy to eat, as sometimes the full chick peas will fall or roll out. I also purchase prepackaged salads instead of buying lettuce. I just steal some lettuce from the salads to put onto the wraps. I’m extremely lazy lol.
